Bulgaria is considered to be the homeland of yogurt, because there the famous Bulgarian bacillus (lactobacillus bulgaricus) was discovered and it was there, where it was used for the first time. A Bulgarian doctor, named Stamen Grigorov, made this revolutionary foundation for a completely new culture of living.
Bulgarian yogurt, as well as Bulgarian yogurt starter cultures, are unique, worldwide famous milk product, which contains large amounts of live and metabolically active cells – the L. bulgaricus and the S. thermophilus. There is also a high number of live beneficial lactic acid bacteria in it, by count between 400 million and 1 billion per gram of yogurt. These bacteria cause profound changes in the milk content and synthesize substances, which positively influence the human organism.
Many people ask if it is true that the famous Lactobacillus Bulgaricus bacterium is found only in Bulgaria and the correct answer is - no. You can grow the bacteria in different parts of the world (as in fact many people do). But the original yogurt starter culture is of course - unique.
What is unique about the Bulgarian strain is that, only in Bulgaria it preserves its qualities in further generations of the same strain, i.e. if you use your previous yogurt to start your new batch. Therefore, if you make your yogurt outside Bulgaria, you will notice that after a batch or two, the yogurt loses its unique taste, physical appearance and qualities. Scientists are not sure about the reasons. It is often contributed to the unique climate of the region but certainly more factors influence the preparation process of Lactobacillus Bulgaricus than the environment.
To normalize (recover the state of beneficial microflora in the body) in the daily diet there has to be food, rich in probiotic microorganisms. Therefore, the development of medicines and food products containing selected probiotic strains with specific activity, is the future of modern organic food and bio technologies.
